Biography

Rachel Liebe is an assistant professor in Nutritional Sciences at OSU. She earned her PhD in Community and Behavioral Nutrition and MPH from Virginia Tech in 2023. Her work focuses on food insecurity, health disparities, and the non-nutrition factors that shape nutrition and health outcomes. Her current research examines the relationship between food security and mental health among mothers, including the roles of poverty stigma and coping. She also enjoys teaching evidence-based practice and research methods, helping students build skills to critically evaluate and apply research in nutrition and public health.
